What's for dinner tonight? Red Beans and Rice of course and load on the Tabasco! It is a Fat Tuesday tradition at my house and it is so easy to cook. The great Chef Paul Prudhomme walks you through it below. It is a real Louisiana treat and perfect for the cold weather we have been having this week in the HV.

If you are worried about cooking beans from scratch - no worries I cheat all the time with the ones from the can. You just have to make sure you give them enough time in the pot to soak up all the goodness from Paul's seasoning suggestions. Add a fun cocktail and some beads and you will feel like you are sitting on Bourbon Street enjoying a Louisiana favorite.

For the food adventurer I would suggest you throw some fried alligator next to it, but that's not everyone's favorite up in these parts, not to mention it isn't easy to find. So chicken works well too and NO good alligator doesn't taste like chicken. Happy Fat Tuesday ya'll - Enjoy.
