Have a few extra hard boiled eggs laying around? If you're like me, you just had to buy that extra dozen to make sure you had enough for everyone to color, so now what are you going to do with them? Here's some thoughts...

1. Deviled eggs are the first thing that come to mind, but I think we've had enough of those this weekend, so let's move on...

3. Here's something that's a little strange I found on ehow.com, fun things to do with hard boiled eggs, you can make what they call a popped out egg eyeballs on sandwich..you have to read the article it's too weird to even explain...

4. I also discovered a recipe for noodles with mango, hard boiled eggs, and roasted sesame seeds, I didn't bother to print it, the picture kind of freaked me out a little...

5. This could be another option, make those hard boiled eggs bounce, apparently if you soak a hard boiled egg in white vinegar for a certain number of days, then rinse and repeat, or maybe you dry it first, (I lost track halfway through) you hold the egg just a few feet above the ground and gently drop it, it will sort of bounce..unless of course you do it too high and then it simply breaks. 6. Egg salad, spinach salad, macaroni salad all come to mind, but I'm already tired of mayonnaise encrusted salads and it's only April...
