We are smack dab in the middle of comfort food season. Let's face it by this time in January we have given in to every craving. My go to comfort food has always been macaroni and cheese. My Mom had the greatest recipe. Nothing to crazy just Ronzoni Pasta and a can of Campbell's Cheddar Cheese soup. She'd boil the pasta then pour the can of soup over it and ta-da dinner.

Today we have taken Mac n Cheese to new culinary levels. It seems to be on every menu even in fine dining places. You can now get it with lobster chopped up in it or on top of a burger. If you going for the burger I recommend the Mack Truck at P&G's in New Paltz. It's a burger with mac n cheese served on a grill cheese sandwich.

So with so many versions of Mac N Cheese I got wondering is the a "best cheese" for Mac N Cheese and it turns out there is, Cheddar. Sharp Cheddar is consider the go to cheese. I find it fascinating that in this day age of culinary inventiveness my Mom's recipe that used cheddar cheese soup wasn't to far off from today's normal.
