
Holiday Baking: Beth’s Cranberry Orange Walnut Bread
If you're like me, you're feeling a little bit of pressure since Thanksgiving is tomorrow, but there's still time to make one of my favorite holiday quick breads, Cranberry Orange Walnut Bread.
This is so easy to make even during this hectic week and it's wonderful to nibble on Thanksgiving morning with a little cream cheese while you're working in the kitchen. It's also nice to share with your family, and it makes a nice little gift for your guests to take home!
Cranberry Orange Walnut Bread
pre-heat oven to 350 degrees
Ingredients:
2 cups flour 1 egg, beaten well
1 cup sugar 3/4 cup, plus a tablespoon orange juice
1 1/2 tsp. baking powder 1 tablespoon orange rind
1/2 tsp. baking soda 1/4 cup olive oil
1/2 tsp. salt 1 can of cranberry, either sauce or whole berry
1/2 cup chopped walnuts
Add dry ingredients to mixing bowl, whisk to mix completely. In a separate bowl, beat the egg, add the orange juice, orange rind, and oil, mix together and then add to the dry ingredients. Stir until moistened. Add the cranberries and nuts and stir until mixed.
Pour into a greased 9x5 loaf pan, or 3 mini-loaf foil pans(especially if you are giving these as gifts) Bake at 350 degrees for 45-50 minutes, you'll know they're done if a knife inserted in the center of the loaf comes out clean. Let cool and then be prepared for raves from family and friends!
