With Thanksgiving only 3 weeks away and Christmas a mere 4 weeks after that, it's time for my favorite activity to begin. Let's bake! I have been gathering up my favorite recipes and collecting new ones I want to try this year. With my ingredient list in my hand, I will be hitting one of our local shop- in-bulk establishments.

So, I kind of wondered if maybe you wouldn't mind if I shared a favorite recipe or two with you and then maybe you could share one of your favorites with me. That way we could share our traditions as well as our food. Okay, I'll go first.

This is my recipe for "Fresh Apple Cake", technically it's my Mom's, but I won't tell her if you won't. This is one of my favorite early fall recipes. It is very moist and you don't need to ice it, it is perfect just the way it is and it couldn't be easier to make. If you happen to have a copy of the Poughkeepsie Italian Center Cookbook, published in 1999, then you have this recipe on page 172. If you don't happen to have a copy, here's the recipe.
