Stuffed Bagels Take Over the Hudson Valley

New York is known for their phenomenal bagels. Rumor has it, New York bagels are so good because of the city water that is used in the baking process.

While that's all well and good, the Hudson Valley is also known for the bagels, but of the stuffed variety.

Early on in the pandemic, Ali Chetkof Rhodes and Jeremy Rhodes we're baking like all of us in their kitchen to pass time during the lockdown. At one point they decided to try stuffing their bagels with pizza toppings.

It was a huge hit with friends and family, and that's where Moonrise Bagels was born.

Moonrise Stuffed Bagels Open 3 Locations

What started as a popup from their apartment in Ulster County turned into 3 store fronts across the region.

Ali and Jeremy first opened up a location in Woodstock and after being featured all over national news sites including the Today Show, they opened up a second location in Poughkeepsie.

The Poughkeepsie location is nestled into the hustling and bustling community of Heritage Plaza across from Marist University.

Then, in early 2025 Moonrise opened a pop-up location in Kingston. Needless to say, Moonrise has been a hit with the Hudson Valley community.

When we say Moonrise Bagels is a hit in the Hudson Valley, we mean it. Moonrise has shared that they recently sold their 100,000 stuffed bagel!

An incredible, and delicious accomplishment if you ask me. On Instagram, Ali writes:

What started as a fun little idea in our kitchen has grown into something bigger than we ever imagined. From pop-ups to our first shop, and now three locations in the Hudson Valley, every step of this journey has been fueled by our wonderful team, incredible community, friends, and bagel lovers.
