The heartburn this morning is totally worth it.

During the CJ in the Morning show Wednesday morning, Mark and Toni Elia from Hudson Valley Sausage Company/Elia's Meat Market stopped by. They were helping CJ and I get ready for the festivities this weekend at Beer, Bourbon and Bacon over at Barton Orchard this weekend in Poughquag this Saturday. Of course they brought along some delicious treats for us to try out. We snacked on hot dogs of different varities like Korean, Apple Butter, and my personal favorite, Jalapeno.

The hot dogs were obviously mouth watering, but their bacon was out of this world. As soon as Toni put the bacon on the skillet everyone left their studio to try and snag a piece. It turns out that this is a new bacon recipe for the Elia's. The bacon is flavored with tons of spices like pepper, onion, sesame, sea salt and a many more. Then the bacon is heavily smoked. Sounds amazing right? Well, since the bacon is so new it needs a name. Get your creative bacon juices flowing, because naming the bacon could win you a sausage making class with Mark Elia and 20 pounds of sausage to take home.

I've come up with a couple to get the ball rolling: Smoked Up, BAEcon (what the kids are calling their crushes now a days) and Take my Breath Away Bacon.

Have a creative name? Send it to Mark at  eliasmarket@optonline.net or find them on Facebook or on their website. The Elia's will debut the name on Saturday at Beer, Bourbon and Bacon. Tickets are still available!
