It's time to get sappy.

When March rolls in Hudson Valley maple syrup fans know what time it is. It's maple sugaring season!

What is Maple Sugaring?

So what exactly is maple sugaring? You may have seen some buckets strung along your favorite maple trees in the Hudson Valley. These trees are tapped and waiting for sap to be produced and then turned into Maple Syrup.

The Maple Sugaring Process

According to CTMaple.gov, creating maple syrup is a 5 step process:

1.Seasonal Prep
2. Knowing When to Tap The Trees
3. Identifying Trees That Need to Be Tapped
4. Collecting Tapped Sap and Processing it by Boiling/Evaporating
5. Filter. Grade. Pack the Sap.
