New York City is in for a treat as a Hudson Valley business opens up a new location out of the region.

Trendy Stuffed Bagels Take Over The Hudson Valley

Bagels are a New York staple. A few years ago, a local Hudson Valley couple added a little flair to a homemade bagel and it's been a whirlwind ever since.

Ali Chekof and Jeremy Rhodes were living Woodstock, New York during the 2020 Covid Pandemic and were doing what everyone was doing...baking. When they started making their own bagels, they tried something different.

They stuffed the bagels with pizza toppings. Their friends and family loved it. That's when the couple started stuffing bagels with other delicious foods like buffalo chicken and bacon, egg, and cheese.

Born was Moonrise Bagels.

The stuffed bagels were featured on The Today Show and word spread like wildfire. Ali and Jeremey opened their first location in Woodstock, from there they opened 2 more locations one in Poughkeepsie and another in Kingston.

Moonrise Bagels is ready for their 4th location, but this time they're sharing their deliciousness with our friends in New York City.

Moonrise Bagels To Open First New York City Location

If you've been paying attention, Moonrise Bagels has been teasing big news on their social media accounts.

After sharing photos of a set of keys, fans of the stuffed bagels knew a new location was in the works...but where?

Moonrise Bagels is opening their 1st location in New York City this fall!

On Tuesday August 20th, 2025 they posted on Instagram "We can hardly believe we get to say this… Moonrise Bagels is officially coming to NYC." Chekof-Rhodes tells us in a statement:

“When we first started making stuffed bagels in our Woodstock apartment during the pandemic, we never imagined it would turn into a business. We certainly never thought it would grow into three Hudson Valley shops, and we certainly never dreamed we’d be opening a location in NYC, the bagel capital of the world.

Adding "We feel so lucky to have created a product that brings joy to people’s lives and are so grateful to our amazing team and community for believing in us and supporting us every single day." We'll make sure to keep you updated on when the new NYC location opens later this fall.

Popular Burger Spot Also Opens New Location in NYC

Another Hudson Valley favorite opened up their first New York City location this year as well. Moonburger (no relation to Moonrise Bagels) opened their first location in Kingston, New York back in October of 2021. At the beginning, Moonburger was an all plant-based burger spot. However, after growing in popularity they added a premium New York beef burger option.

The burgers were so popular that Moonburger opened 2 more locations, one in Poughkeepsie and another in New Paltz.

In the summer of 2024, Moonburger opened up their 4th location in Williamsburg, Brooklyn. The Williamsburg location is the only location that also serves beer and wine.
