Owner Michael Hinspeter decided to name the new restaurant after his son and Uncle, both named Robbie. What sets the new business apart, Hinspeter says, is the unique angle to food service. "We are not a restaurant, [and] not a typical deli. I would say we will be similar to a Tony's Newburgh Lunch... like an old Luncheonette style place." There are also special offers for many Hudson Valley residents.
