It’s National Grilled Cheese Day

Why didn't I know about this sooner? A day dedicated to the ooey, gooey, wonderful chessyness that is a grilled cheese, and yes I think I just made up a few of those words. Talk about comfort food, a grilled cheese sandwich epitomizes it.

Once, when I was in the hospital during high school, my Dad came straight from work and, after visiting a bit, headed to the cafeteria uttering these famous last words, that should be a safe choice, no one messes up a grilled cheese. Unfortunately, they managed to and it remains a sad and damaging memory my Dad talks about to this day.

While there are restaurants that have elevated the grilled cheese to amazing, and delicious, heights, you don't have to get fancy. Two pieces of bread (your choice) butter on the outside of each slice, and may the cheese snobs forgive me, Kraft American cheese. It melts the best, it has the taste that reminds me of when I was young, and it is so simple.
