With Thanksgiving just a few days away, are you looking forward to those side dishes that you only get once a year? I think we all are. Your Grandmother or your Aunt or your Mom now only make that (fill in the blank here) dish only once a year and if you don't claim divs now, you won't get any... What are those dishes? I am looking to make a few different ones this year.

Believe it or not, my family loves Brussels sprouts. Crazy right? We will pretty much eat them cooked how ever we can get them, but this is a favorite:

Ingredients:

  • 6 strips raw bacon, (any type pretty much will do)
  • 4 tablespoons butter (half a stick)
  • Two 1 pound bags of Frozen Brussels sprouts;
    Defrost the sprouts and then cut each one in half. Drain in a colander until you are ready to make.
  • 1/2 large onion, chopped
  • Kosher Salt, Fresh cracked pepper

Directions

*Note, Keep in mind you can do this, ahead of time, and then reheat. But you are not going to want to add the bacon until you are going to serve it. This will keep the bacon crisp. If you don’t care about how crisp your bacon is, go ahead, make this, combine everything, refrigerate covered, and then reheat in the microwave.

Start by cooking the bacon in a large skillet over medium-high heat until crispy. When it’s done, let it cool on top of a paper towel-lined plate, then when cool, roughly chop or break into small pieces. In same pan with the bacon fat, go ahead and melt butter over high heat. Add onions and cook for a minute or two, then and Brussels Sprouts and cook, stirring occasionally, until sprouts are golden brown, 8 to 10 minutes. Season with a little bit of salt and pepper, to taste, and toss bacon back into pan. Then serve immediately (or read above to try and make ahead & reheat).
