As we get closer to Halloween you would think we would run out of food to eat that was either made with Pumpkin or Pumpkin Spice. We probably will but not just yet because Monday (October 21st) is National Pumpkin Cheesecake Day. Celebrated every year on October 21st the National Days folks are still trying to find the origin. I am going with someone who loves pumpkin spice needs one more food item on the calendar.

Don't get me wrong I am not anti pumpkin or anti pumpkin spice but I also believe  everything in moderation. Now a days it seems that August hits the calendar and suddenly pumpkin spice food is everywhere. I will say though that true pumpkin items don't really hit until later in the fall. For example Pumpkin Pie on Thanksgiving. So I guest Pumpkin Cheesecake in October could be a nice prelude.

Allrecipes.com has a great selection of pumpkin recipes. They offer nine total that include Pumpkin Bread, Pumpkin Bars, Pumpkin Cookies and even pumpkin soup and seeds. You'll have to go to National Day Calendar if you are looking for a good pumpkin cheesecake recipe for some reason Allrecipes.com doesn't have one. The National Days Folks have everything form basic cheesecake bars to Caramel Pecan Pumpkin Cheesecake bites.

If I was going to pick one recipe to try I would go with the Caramel Pecan Pumpkin Cheesecake bites. They look amazing and they would be perfect as a sweet treat for a Halloween party. Don't take my word for it check out the recipe from Better Homes & Garden that National Days suggested..
