It is not official but it should be, December should be National Salad Month. We are already one holiday meal into the holiday season. Thanksgiving dinner down and the calories counted. And now that most of those carb heavy leftovers have been devoured it is time to make a plan for food that will allow us to indulge for the rest of the season without gaining the proverbial "holiday ten."

So I declare this National Salad Month. A month for all of us to eat a little healthier at least Monday through Friday leaving the weekend meals for the holiday party treats. If you head to your favorite farm stand you will be able to find lots of winter greens for salads and no I don't mean pine trees. Although if you don't have your tree yet it could be a great time to grab that as well.

Along with the usual green imports of Kale, Romaine and Iceberg be sure to pick up a local seasonal favorite to add as ingredient. We have a complete list below that includes beets, leeks and even cranberries.
